So I did really really great this week. Until last night and today. I went to my parents this weekend because a bunch of my friends from high school were in town and we had a little mini-reunion. This was pretty stressful for me because I weigh almost a hundred pounds more than I did in high school. And I just felt self conscious about where I’m at in my life. I’m almost 25. I’ve been married for almost 6 years. I have no kids (which I’m okay with, and almost proud of!). I am a waitress and two different restaurants. I am still in college (7 years after graduation). It’s a little embarrassing. I felt better after we had chatted for awhile though. My friends are doing just a ton better. Most of them have children (one has 4!) and some are divorced. Only one has graduated college yet.
I did okay on food. Until mom made a sugar cookie cake. I don’t know if y’all have ever had sugar cookie cake, but it’s amazing. And completely NOT diet friendly. Here’s the recipe:
1 stick butter
1/2 c oil
1 cup water
2 cups all-purpose flour
2 cups sugar
2 eggs, beaten
1 cup sour cream ( or mix 1 C milk with 2 tsp vinegar)
1 teaspoon almond extract
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1 box powdered sugar
1 stick butter
1 tsp vanilla
1 tsp almond extract
milk or cream to make spreadable
- In a large saucepan, bring butter, oil, and water to a boil.
- In bowl mix flour, salt, and sugar.
- Pour boiling mixture in bowl and stir batter.
- Stir in eggs
- Mix baking soda in sour cream then stir it into batter and add vanilla and almond flavoring.
- Pour in greased 13X 9 pan, or a cookie sheet with edges and bake at 350* for about 20 minutes.
- Ice cake while warm.
- Eat and have a mouth-gasm.
It’s seriously one of the best cakes I’ve ever tasted. Like I’ve had dreams about this cake. I ate a really big piece. Like an 800 calorie piece….
So I drove back home this morning and weighed in. 222 lbs. I’m pretty happy with this number. I did see lower numbers this week (all the way down to 220!). I’m sure the massive piece of cake didn’t help me stay at 220. But a three pound loss is fine with me! Hopefully I’ll see that 220 again soon!
I’m going to try going to the gym in the morning. (8 am!) Maybe I can make a habit of it. But for now I’m heading to bed. I just finished an 8 hour shift and I’m pooped!
